Mixed Vegetable Stew



Ingredients

1.    Potatoes - 2 nos (cut into cubes)
2.    Carrots - 1 no (cut into cubes)
3.    Green peas - 1/2 cup
4.    Button Mushroom – 250gm (cut it into small pieces)
5.    Onion - 1 no (finely sliced)
6.    Green chillies - 4 - 6 nos
7.    Curry leaves - 2 sprigs
8.    Ginger(chopped) - 2 tsp
9.    Cardamom – 3-4 nos.
10.  Cinnamon stick – 2-3 nos
11.  Cloves(Grambu) - 1 no
12.  Pepper corns(Kurumulaku) - 3 - 4 nos
13.  Thick coconut milk - 1/2 cup
14.  Thin coconut milk - 2 cup
15.  Salt - As reqd


How to Prepare

  1. Soak green pe as for6-8 hrs. Cook it in a pressure cooker with little salt and enough water. Keep it aside.
  2. Crush cinnamon, clove, cardamom and peppercorns. Keep them aside.
  3. In a pan cook vegetables, onion, green chillies, ginger, curry leaves, crushed spices and salt in little water.
  4. When its half cooked add cooked green peas and  2 cups of thin coconut milk and boil for 4-5 minuets. Then add ½ cup thick coconut milk. When it starts to boil, remove from fire. Serve hot along with Apam, Idiyappam, Bread etc
