Masala Dosa
Ingredients
For Stuffing
2. Potato(large) - 2 nos
3. Carrot – 2 Nos
4. Beetroot- ½ No (Optional)
5. Onions(large) – 2 Nos
6. Garlic pods - 5 nos
7. Ginger(grated) - 2 tsp
8. Green chillies - 4 nos
9. Black gram - 1 tsp
10. Mustard seeds - ½ tsp
11. Bengal Gram – 1 tsp
12. Curry leaves - 10 pieces
Turmeric powder - ¼ tsp
Turmeric powder - ¼ tsp
13. Vegetable oil - 1 tsp
14. Salt - As reqd
How to prepare
For dosa batter
- Refer the basic recipe for dosa/ idli
For the stuffing (masala):-
- Wash and peel off potatoes, carrots and beetroot. Cook well these vegetables with salt in pressure cooker. Allow to cool. Smash all the vegetables well.
- Heat oil in a broad pan. Splutter mustard, and dal. Add chopped onion. Sauté well. Add chopped garlic, green chilli and Ginger and stir well. Add turmeric powder and stir well.
- Add smashed vegetables, curry leaves and ¼ cup water. Stir well. Cover the pan and cook for 3-4 minutes. The water should be evaporated completely. Remove from fire.
- Heat a flat pan and make thin dosas by spreading the batter on the pan with a ladle.
- Spread oil all around the dosa and when the edges turn golden brown. Place two table spoons of the prepared masala on the dosa and fold one side over it and remove from pan and serve with sambar and chutney.
