Unniappam

Unniappam is a traditional kerala snack item. Here I'm uisng a non stick unniappam pan for preparing these unniappams. So its an Oil free Unniappam. So Healthy... So Tasty...










Ingredients

1.      White Rice (Pachari) – 1 Kg
2.      Jaggery - 1/2 kg
3.      Coconut pieces (square small pieces) – ½ cup
4.      Banana (rasakadali/palyamkoden pazham) - 4 - 6 nos
5.      Cardamom Powder(Elakka) - 5 tsp
6.      Cumin powder(Jeerakam) – 4tsp
7.      Oil – 2 tsp
8.      Ghee – 3 table spoon

How to Prepare

  1. Wash and soak the rice for 2 hrs. Make a powder of this soaked rice using a grinder. (Not too fine powder, but better the puttupodi).
  2. Fry the coconut pieces in little ghee.
  3. Melt the jiggery with little water. Boil this melted jaggery in a pan and remove its impurity by filter it through a strainer.
  4. In a large vessel, take the rice flour; add the hot jaggery syrup to it. Mix well. Then add smashed banana, cardamom powder, cumin powder, fried coconut pieces and ghee and mix it with your hand. Make batter like the consistency for dosa batter.(Add little water, if you need)
  5. Heat the non-stick unniyappam pan and sprinkle little oil in each of its hole. When the pan become hot pour the batter in each hole.  Fry it in low flame until its bottom side becomes golden brown in colour. Then turn it into other side with the help of a fork. And fry that side also till it becomes golden brown in colour. Serve hot or you can keep it an airtight container for 1 – 2 weeks.
Note: If you are not using the non Stick pan, then pour oil in each of its hole and when the oil becomes hot pour the batter, Fry and drain out excess oil using a tissue paper
