Idli / Dosa



Ingredients
1.      Raw Rice/ Idli Rice - 3 cups
2.      Black gram(Uzhunnu) – 3/4 cup
3.      Soya Bean – ¼ cup (Optional)
4.      Cooked rice- ½ cup
5.      Fenugreek – 1 tsp
6.      Salt – to taste
7.      Oil / Ghee - As reqd

How to Prepare
  1. Wash and soak rice for 8 hrs. Wash and soak dal, soyabean and fenugreek  for 4 hours. 
  2. Grind rice, boiled rice and dal mix separately, adding required quantity of water. 
  3. Mix rice, dal and salt. Prepare a thick batter. 
  4. Keep it overnight to ferment.
For Idli.
  1. Spread any oil on the idle mould. 
  2. Pour the batter on idli moulds and steam the cooker for about 5-7 minutes. 
  3. Insert a clean matchstick (back end) or a skewer. The skewer should come out clean if the idlis are done.
For Dosa
  1. Add little water to the fermented batter to loose the consistency.
  2. Pour one spoon full of batter on a greased frying pan as thin as possible.
  3. Pour 1 tsp of oil on its edges. When the base is golden brown, turn the side and cook well. 

:- Serve hot dosa  and Idli with chutney/ Sambar.
