Mathanga (Red Pumpkin) Vilayichathu.



I feel a nostalgia when I have it because my mummy had prepared this for us during my school days. Its very delicious sweet


Ingredients

1.        Red Pumpkin – 1 kg
2.       Jaggery – ½ cup
3.       Desiccated coconut – ½ cup
4.       Cardamom powder – ½ tsp
5.        Cumin seeds powder – 1 tsp
6.       Rice -1/2 cup
7.        Salt – a small pinch


How to Prepare 
  1. Dry roast the rice and allow to cool. Make a powder of roasted rice using a grinder. 
  2. Peel off the skin of pumpkin and cut into small cubes. Steam the pumpkin cubes and allow to cool. Then mash it well. 
  3. Place a thick bottom pan in stove. Add crushed jaggery and 1 cup water. Boil well. Add coconut and stir well. When the coconut cooked well, add the mashed pumpkin and still well. Then add the roasted rice flour. Stir well. Water should be evaporated completely. Add salt, cardamom powder, and Cumin seeds powder. Stir once again. 
  4. Serve warm / cool.
