Potato – Carrot Thoran
I got this thoran idea from my friend Sherly Aji's Blog (http://sherlyaji.blogspot.com/search/label/Vegetable%20Thoran%2FStir%20Fry). But I have made little changes in it like adding carrot and garlic etc. Thanks Sherly. Lets try a different style from the usual thoran . . .
Ingredients
1. Potato –1 large ( cut in to lengthwise very thinly)
2. Carrot – 3 Nos ( cut in to lengthwise very thinly)
3. Small Onion- 4 – 5 nos.
4. Garlic – 3 - 4 nos
5. Fresh Grated coconut – ½ cup
6. Green chilly – 3-4 nos (chopped)
(if the Kanthari chilly available, it’s the best for all thoran.
Here I’m using Kanthari chilly – 5-6 nos)

7. Salt – To taste
8. Oil – 1 table spoon
9. Turmeric Powder – ½ tsp
10. Mustard Seeds – ½ teaspoon
11. Curry leaves – few
Preparation
1. Mix potato, carrot, salt and chillies and add ¼ cup of water to it. Microwave this for 8 -10 minutes (Or you can steam or boil. But don’t boil too much to loose the crunchy texture of carrots and potatoes).
2. Take a non stick pan. Heat oil. Then splutter mustard seeds and add the crushed onion and garlic. Then add curry leaves and turmeric powder and stir well.
3. Then add the potato carrot mix and coconut. Mix well then cover the pan and cook in a low heat for about 3 - 4 minutes. Open the cover and stir fry for another few seconds. Your dish is ready.
