Padavalanga (Snakeguard) - Carrot Thoran
Ingredients
1. Padavalanga –1 medium size (finely chopped)
2. Carrot – 2 Nos (finely chopped)
3. Big Onion – 1 No (finely chopped)
4. Green chilly – 3-4 nos (chopped)
(if the Kanthari chilly available, it’s the best for all thoran.
Here I’m using Kanthari chilly – 5-6 nos)

5. Salt – To taste
6. Oil – 1 table spoon
7. Mustard Seeds – ½ teaspoon
8. Small Onion- 4 – 5 nos.
9. Garlic – 3 - 4 nos
10. Dried Red chillies – 2-3 Nos
11. Curry leaves – few
12. Turmeric Powder – ½ tsp
13. Fresh Grated coconut – ½ cup
How to Prepare
- Mix chopped Padavalanga, Carrots, Big onion, Kanthari chilly, Curry leaves, salt and ½ cup water. Cook this for 7-10 minuts in a covered pan.
- Take a non stick pan. Heat oil. Then splutter mustard seeds and add the crushed onion and garlic. Add dried red chillies and then curry leaves and turmeric powder and stir well.
- Then add cooked padavalanga – carrot mix and coconut. Mix well. Then cover the pan and cook in a low heat for about 3 - 4 minutes. Open the cover and stir fry for another few seconds. Padavalanga – Carrot Thoran is ready for serving .
