Padavalanga (Snakeguard) - Carrot Thoran


Ingredients
1.     Padavalanga –1 medium size (finely chopped)
2.     Carrot – 2 Nos (finely chopped)
3.     Big Onion – 1 No (finely chopped)
4.     Green chilly – 3-4 nos (chopped) 
(if the Kanthari chilly available, it’s the best for all thoran. 
Here I’m using Kanthari chilly – 5-6 nos)
5.     Salt – To taste
6.     Oil – 1 table spoon
7.     Mustard Seeds – ½ teaspoon
8.     Small Onion- 4 – 5  nos.
9.     Garlic – 3 - 4 nos
10. Dried Red chillies – 2-3 Nos
11. Curry leaves – few
12. Turmeric Powder – ½ tsp
13. Fresh Grated coconut – ½ cup


How to Prepare


  1.            Mix chopped Padavalanga, Carrots, Big onion, Kanthari chilly, Curry leaves, salt and ½ cup water. Cook this for 7-10 minuts in a covered pan.
  2.          Take a non stick pan. Heat oil. Then splutter mustard seeds and add the crushed onion and garlic. Add dried red chillies and then curry leaves and turmeric powder and stir well.
  3.         Then add cooked padavalanga – carrot mix and coconut. Mix well. Then cover the pan and cook in a low heat for about 3 - 4 minutes. Open the cover and stir fry for another few seconds. Padavalanga – Carrot Thoran is ready for serving .
