Banana - Coconut Pancake



Ingredients

For the pancake
1.      Wheat flour- 1 cup
2.      Egg – 1
3.      Salt - a pinch
4.      Water- as required

For the filling
5.      Banana – 2 Nos
6.       Coconut (grated) - ¾ cup
7.      Sugar - 2 to 3 tbsp (or to taste)
8.       Nuts - a few (chopped)
9.      Raisins – a few
10.   Ghee - 2 tbsp
11.   Cardamom (powdered)- a pinch (optional)

Method 
  1. Mix the wheat flour, egg, salt, and water to make a thin batter and keep aside.
  2.  To make the filling, heat the ghee and add the chopped nuts and raisins. Fry well. Keep it aside. Then add chopped bananas to the remaining ghee. Sauté well. Then add the grated coconut and the sugar and cook. Add the cardamom (optional), and remove the vessel from the flame. Add nuts and raisins to this banana mix.
  3. Pour a ladle full of the batter on a hot tawa and spread it around to make a pancake.Now place the filling on one end and roll it closed to make the pancake.

 Note: The filling may be prepared a day in advance and stored in the refrigerator.
