Beans - Carrot Thoran



Ingredients

1.        Beans – 250 gm (finely chopped)
2.        Carrot – 3 Nos (finely chopped)
3.        Big Onion – 1 No (finely chopped)
4.        Green chilli – 3-4 nos (chopped) 
5.        Salt – To taste
6.        Oil – 1 table spoon
7.        Mustard Seeds – ½ teaspoon
8.        Small Onion- 4 – 5  nos.
9.        Garlic – 3 - 4 nos
10.   Curry leaves – few
11.   Turmeric Powder – ½ tsp
12.   Fresh Grated coconut – ½ cup


How to Prepare 
  1. Wash beans. Carrot, big onion and green chilli well and finely chop.           
  2. Mix the finely chopped ingredients,  Curry leaves, salt and ½ cup water. Microwave it for 7-10 minutes in a covered pan.
  3. Take a non stick pan. Heat oil. Then splutter mustard seeds and add the crushed onion and garlic. Sauté well. Then add turmeric Powder and stir well.
  4. Add cooked Beans – carrot mix and coconut. Mix well. Then cover the pan and cook in a low heat for about 3 - 4 minutes. Open the cover and stir fry for another few seconds. Beans – Carrot Thoran is ready.
