Oats - Vegetable Soup . . .

I think this is one of the easiest way to feed our kids vegetables, especially my Ammukutty. She doesn't need any curry with rice / chappati / dosa. So Finally I decided to do some experiments with soups..



Ingredients:

  1. Oats - 1/2 cup
  2. Water - 1 cup
  3. Milk - 3/4 cups
  4. Olive oil - 1 tsp
  5. Carrot - 2 Nos. finely chopped
  6. Potato - 1 No. finely chopped
  7. Sweet Corn - 1/4 cup
  8. Garlic - 2 tsp
  9. Onion - 1 No finely chopped
  10. Oregano - 1 tsp
  11. Pepper - 1/2 - 1 tsp
  12. Salt - to taste

How to Prepare: 

First heat a pan with olive oil - add garlic and saute till golden brown then add onion and saute till slightly browned then add the vegetables.


Saute till raw smell of vegetables leave then add oats and fry for 3mins.Then add water and salt and let it boil till oats gets cooked.May be you can cover and cook.

Once the water is almost absorbed and veggie turn slightly soft add milk and let it simmer for 5mins. Add oregano,pepper powder & switch off. Serve hot



Notes:
  • Its not a clear soup. But The consistency should be slightly runny...
  • You can use any vegetable of your choice.
  • You can use either chopped vegetables or grated version. But if you r using chopped vegetables, dont make it too mushy....it should be slightly crunchy enough to bite.
  • roasting oats makes it nonsticky.
