Jilebi from leftover Dosa / Idli batter
Ingredients:-
Dosa batter - 3 cup
All purpose flour (Maida) - ½ cup
Corn flour- 1 table spoon
Sugar - 2 cups
Water - 2 cups
Salt
Jilebi colour -
Rose essence - ½ tspoon
Ghee - 1 tablespoon + 1 tspoon
Cardamom- 5-6 nos
Oil - for frying
Method of preparation:-
Add all purpose flour, corn flour and salt to fermented Dosa batter. Mix well. Need a thick consistency.
Then add few drops of jilebi colur and mix well to get an even colour.
Transfer this batter into a piping bag.
Add 2 cups sugar to a thick bottomed pan. Then add 1 tspoon ghee, crushed Cardamom, rose essence & 2 cups water. Mix well and allow to boil. Keep it on fire to get a thick consistency. Then keep the flame into low... Syrup always should be hot
Take another pan to fry Jilebi and add enough oil to deep fry. Add 1 tablespoon Ghee to it. When it become hot, squeeze the prepared batter from piping bag to the hot oil in jilebi shape. Fire should be in low - medium level. Flip it over after 2 minutes . Fry for another couple of minutes on low - medium flame.
Transfer directly to the hot sugar syrup. Soak it there for 1 - 2 minutes. Remove from syrup. Allow to cool..
Enjoy sweet Jilebi..
If you keep it for 4-5 hours, then it will be more tasty after the complete absorption of sugar syrup and it will be more juicy...
