Paneer – Veg stuffed bunnies

Its an easy and very healthy recipe. I used only less amount of all purpose flour and more whole wheat flour and powdered oats. Also I avoided butter and used olive oil. We can send it as kids snacks or lunch even because its filled with veggies and they can eat it very easily without spill the food.



Ingredients

Lukewarm Water – 1/4 cup
Warm Milk – 1 1/3 cup

Olive Oil -  3 tablespoons
All Purpose Flour -  1 cup

Powdered Oats – 1 Cup

Whole wheat flour – 2 cups
Sugar - 3 table spoon
Salt – 1 teaspoon
Instant Yeast – 2 teaspoons

For Egg wash (Optional)

Egg – 1

For Filling

Potato – 2
Carrot – 2
Paneer – 1 cup
Big Onion – 1 (Finely chopped)
Ginger – 1” Piece (crushed)
Garlic – 2-3 flakes (Crushed)
Green Chilli – 2 (Finely chopped)
Dried Methi leaves – 2 tspoon
Garam Masala –2  tspoon
Kashmiri chilli powder -1 tspoon
Turmeric powder – ½ tspoon
Oil – 2 table spoon
Salt-

Method:

Take ¼ cup lukewarm water and add  2 teaspoon of sugar and the instant yeast. Mix it well and keep it aside to rise.
Mix the flour and salt in a bowl. Mix warm milk with it in a large bowl. Add the risen yeast mix to this. Then add olive oil. Mix it well until you get a very wet dough. Transfer this to a lightly floured work table; knead gently for 10 minutes, adding a little flour at a time (only if required) until you get a very loose but non sticky dough. (Do not add excess flour and do not knead too hard. I used food processor for mixing and then kneading by hand)
Place the dough in a lightly greased bowl. Cover it with a  cling film and let it rise at room temperature (preferably in a warm place) until it has doubled in size. This can take from 45 minutes to 1 hour.

By this time we can prepare the filling.
Clean and peel off carrot and potato. Cook in little water with enough salt in a pressure cooker. Allow to cool. Mash it very well. In hot pan, put 2 spoon of oil. Add onion and sauté well. Then add crushed garlic, ginger and finely chopped green chilli. Again sauté well.
Add chilli powder, turmeric powder and garam masala. Stir well on low flame.  Add mashed vegetables and stir well. Add crumbled paneer and methi leaves. Stir well and adjust salt. Then stir well for 2-3 minutes and then switch off the flame.
Take the inflated dough. Gently deflate the dough and shape into balls. Roll each ball and fill it with veg masala filling. Again roll into balls.
Place the rolls/buns on baking sheets. You can shape these balls into a bunny face by cutting ears’ shape on its top and pierce with a tooth pick for eyes.

Lightly brush them with the egg wash.

For egg wash- beat egg roughly.

Bake the rolls/buns in a preheated oven at 180 C for 15 to 20 minutes until they are done and golden brown.
Remove the rolls/buns from the oven and let them cool on a wire rack.

Notes:
1.       For filling you can use any type of veggies, Meat or Boiled egg as per your choice. Or if you need sweet version, you can use jam or nutella.
2.       You can use flax seeds or sesame if required. Top the buns with flax seeds or sesame seeds just before baking, after egg wash.
