Bread Rolls / Buns
Ingredients:
Lukewarm Water – 1/4 cup
Mix of Milk and Water – 1 cup
Butter (at room temp) - 3 tablespoons
All Purpose Flour - 2 cups
Whole wheat flour – 2 cups
Sugar - 2 table spoon
Salt – 1 teaspoon
Instant Yeast – 2 teaspoons
For Egg wash (Optional)
Egg – 1
Milk – 1 tea spoon
Method:
Take ¼ cup lukewarm water and add 1 teaspoon of sugar and the instant yeast.
Mix it well and keep it aside to rise.
Mix the flour and salt in a bowl. Take milk and water mix in a large bowl. Add
the risen yeast mix to this. Mix it well. Add the flour mix, 1 cup at a time,
mix it well (You can use a food processor or blender to mix it well. If you don’t
have it, then mix by hand) until you get a very wet dough which starts pulling
off from the side of the bowl. Add butter a little to the mix and keep
kneading.
Transfer this to a lightly floured work table; knead gently for 10 minutes,
adding a little flour at a time (only if required) until you get a very loose
but non sticky dough. (Do not add excess flour and do not knead too hard.)
Place the dough in a lightly greased bowl. Grease the dough also. Cover it with
a wet cloth and let it rise at room temperature (preferably in a warm place)
until it has doubled in size. This can take from 45 minutes to 1 hour.
Gently deflate the dough and shape the rolls as desired.Place the rolls/buns on baking sheets. Lightly brush them with the egg wash.
For egg wash- Mix egg and milk and beat
roughly.
Cover them with a wet cloth and let the
dough rise for 45 to 60 minutes (preferably in a warm place) until it has
doubled in size again.
Just before baking, brush the rolls/buns with egg wash . Bake the rolls/buns in
a preheated oven at 180 C for 20 to 25 minutes until they are done and golden
brown. Remove the rolls/buns from the oven and brush them with melted butter and let
them cool on a wire rack.
You can use flax seeds or sesame
if required. Top the buns with flax seeds or sesame seeds just before baking,
after egg wash.
