Coconut Laddoo
Ingredients:
Ghee - 1 tspoonMilk - 1 cup
Milk powder - ½ cup
Sugar -½ cup ( if you need more sweetness, you can use ¾ cup)
Cardamom powder - 1 tspoon
Dessicated coconut 1 ½ cup + ½ cup
Method of Preparation
Heat the ghee in a heavy-bottomed pan over medium-low heat. Add the milk and allow it to warm. Once the milk is hot, add the milk powder, stirring continuously and briskly to ensure a smooth consistency and prevent the formation of lumps.
Continue cooking, stirring occasionally, until the mixture thickens considerably. Add sugar and stir until it is completely dissolved. Add the cardamom powder and mix well to distribute the flavor evenly.
Reduce the heat to a medium flame. Add the 1 ½ cups of desiccated coconut to the pan. Stir continuously until the coconut has absorbed all the milk and the entire mixture begins to pull away cleanly from the sides of the pan. Cook for another 2 - 3 minutes.
Transfer the cooked coconut mixture to a separate bowl or plate and allow it to cool down to a temperature that can be safely handled.
Once the mixture is cool enough to touch, portion and roll the mixture into small, smooth balls. Roll each formed ball in the remaining ½ cup of desiccated coconut to coat the exterior.
