Squid (Koonthal / Kanava) Roast




Ingredients
1.       Squid(Koonthal) – 500g
2.       Onion(chopped) – 3 nos
3.       Ginger(chopped) – 1 cm piece
4.       Garlic(chopped) – 3 flakes
5.       Green chillies(chopped) – 2
6.       Chilly powder – 3/4 tbsp
7.       Coriander powder – 1/2 tbsp
8.       Coconut(grated) – 1/4 of one
9.       Black pepper powder – 1/2 tsp
10.   Garam masala – A pinch
11.   Mustard seeds – 1/2 tsp
12.   Coconut oil – As reqd
13.   Curry leaves – 1 sprig
14.   Salt – As reqd

For preparing marinade:
15.   Green chillies(crushed) – 3 nos
16.   Ginger(crushed) – 1 cm piece
17.   Cocum(Kudampuli) – 1 no(slit thin)
18.   Turmeric powder – A pinch
19.   Curry leaves – 1 sprig
20.   Salt – As reqd

How to Prepare

  1. Clean the squid and slice into small rounds. Rub with salt and wash well. Drain and keep aside.
  2. Mix the ingredients for marinade with one teaspoon of oil. Apply this marinade on the squid slices and keep aside for 30 minutes.
  3. Cook the squid in sufficient water for 35 minutes till the water evaporates completely.
  4. Heat oil in a pan and splutter mustard seeds. Add chopped onions, ginger, green chillies, garlic and curry leaves.
  5. Saute well until the onions turn color.
  6. Add chilly powder and coriander powder and saute.
  7. Add the cooked squid and fry well.
  8. Stir in grated coconut, pepper powder, garam masala and required salt. Saute and remove from fire.
  9. Squid(koonthal) roast is ready and serve.
