Pav Bhaji
Ingredients
Green peas- 1 / 2 cup
Potato - 1 Small
Carrot- 1 small
Tomato - 1 Small (Chopped into small pieces)
Capsicum - 1/2 (Chopped into small pieces)
Onion - 1 small (Chopped into small pieces)
Crushed garlic & Ginger - 1 table spoon
Green chilli - 1 No
Turmeric powder - 1 / 2 t spoon
Kashmiri Chilli powder - 1/2 tspoon
Pav Bhaji masala - 2 Table spoon
Oil - 2- 3 table spoon
Butter - 2 Table spoon
Salt- As required
Coriander leaves - to garnish
Lemon Juice - 1/2 - 1 tspoon
Pav Bun - 6-8 ( or as required)
Butter - To toast pav buns
Method of Preparation
Soak green peas atleast 6 -8 hrs.Rinse and peel off the carrot and potato. And cut the veggies
Pressure cook green peas and veggies. Once it is cooked well and pressure settles down on its own, open the cooker and add enough salt for the vegetables and mash the vegetables thoroughly.
Heat up the pan and add 2-3 table spoon oil to it. Then add chopped onion and saute well on a low to medium flame till the onions translucent.
. Then add crushed ginger - garlic & Green chilli. And saute till the raw aroma of both ginger and garlic goes away.
Add chopped tomato and saute till it become soft and mushy.
Add capsicum and saute for a while.
Then add turmeric powder , chilli powder & pav bhaji masala and mix well.
Add cooked vegetables and mix well. Adjust the salt. Add 1/4 cup hot water if the bhaji is too dry.
Once its done add chopped coriander leaves and butter. Then switch off the stove. Keep it covered. After few minutes, once it started to cool down add the lemon juice and mix well.
Now bhaji is ready serve.
Cut the pav bun into 2 and toast it on a heated pan using butter. Serve it along bhaji. Notes:
- You can use 1 / 2 cup of cauliflower along with carrot and potato to add more nutritious value.
- You can use 1 table spoon butter and an1 - 2 table spoon oil instead of 3 Table spoon oil to saute vegetables to enhance the flavor.
- You can add 1 teaspoon cumin seeds and let them crackle before adding onions. It will enhance the taste.
- Finally when you toast pav bun, you can sprinkle some pav bhaji masala on the butter and toast the bun over it. It will enhance the taste of the bun.
